This is one of my favorite gluten free meals. And it so easy and quick to make.
Have you heard of “Miracle Noodles?”
These translucent, gelatinous Japanese noodles, which are made from the konjacyam, are low in calories and carbohydrates

These are my go to pasta with out the extra carbs and gluten. Shirataki noodles come pre-packaged in liquid, portioned out in a plastic bag that gets refrigerated. ( but you can find them in your local market kept near the dry pasta.) The noodles are watery and emanate a faint, fishy odor (though they’re 100 percent vegan), which comes from the plant they are made from. Shirataki noodle manufacturers recommend rinsing, draining and drying
Ingredients 1/2 tbs oil
2 tbs fresh garlic, minced
2 tbs fresh ginger, minced
5 scallions, whites and greens separated and thinly sliced
1 tbs sriracha ( or to taste )
1 bell peppers, assorted colors, cut into thin strips
6 oz mushrooms, thinly sliced
1/2 cup of broccoli per person

Going gluten free is a choice that I am making. 

 I notice for myself that when I take the gluten out of my diet I feel much better. I was missing my noodles and pasta!!! But I didn’t miss how I felt after eating it. 
Now I have so many more options and these are the newest ones. So yummy! Next week I will add a photo and recipe of the salad I will be making.

Ghee or not to Ghee….

What the heck is Ghee anyways? 
Ghee, or commonly referred to as clarified butter, is a dietary source of fat traditionally used in Indian cooking you can find it in specialty stores like whole foods and some grocery stores. 
How is Ghee Made?
Ghee is made by heating butter slowly until all the water cooks off and the proteins coagulate in the bottom of the pan. The ghee is poured off and strained, solidifying once it has cooled. Ghee is cooked longer than traditional clarified butter which gives it a nutty taste.

Why use Ghee?
Ghee has a higher smoke point than normal butter, olive oil and coconut oil, making it an excellent choice for sautéing foods, It doesn’t taste as good to eat a lone but it has an amazing nutty taste and when add it to your veggies or other foods.
Ghee will last a long time outside of the refrigerator and when stored in air tight container it can last up to 3 months and when kept in a refrigerator, without opening, ghee can last up to a year.

Caprese Salad

Enjoy a delicious and healthy salad.  This is a great go to easy salad you can make in minutes and bring to your next BBQ.  Make sure to make plenty because there will be no leftovers.  
2-3 medium size Heirloom tomatoes, sliced
1/4 to 1/2 inch (good rule of thumb is one per person).
1/4 cup shredded fresh basil leaves.
2 tbs Olive Oil.
1 tbs Balsamic Vinegar  Top with pine nuts
Salt and salt pepper taste.
(Feta or mozzarella optional)

Place sliced tomato, olive oil, balsamic, basil, salt and pepper.

When I started my coaching business I never imagined I would be where I am today. I never imagined I would be helping people change their lives and helping them reach their goals in fitness. I have taken on a new challenge and now i want to help women find a way to live a better life.

When I started out I just wanted to make some extra cash and be able to work outside the home part time so I could be there for my kids when they got home from school but still bring in some income. Shakeology Energy Balls


1 cup gf whole flake oats
1 cup unsweetened shredded coconut
½ cup almond butter
⅓ cup honey or agave
½ cup ground flax seed
1 scoop chocolate vegan Shakeology (I use vegan)
1 tsp vanilla


Mix all the ingredients in a large mixing bowl and form into balls.
Store in the fridge for 3-5 days or freeze in bags.

Food Tip Friday

Stock up on canned, Albacore Wild Tuna. It's my go to when I need a quick lunch, dinner, or snack on a busy day.
It can be added to gluten free bread, sprouted whole grain wraps, lettuce wraps, or delicious raw salads in minutes!

Quick Recipe:
Canned Albacore Wild Tuna mixed with Dijon mustard, capers, grape tomato cut in halves and kalamata olives

1 tablespoon apple cider vinegar, 1/2 lemon,
2 tablespoons evo, pepper and salt to taste.

When I joined my first challenge group, I had no idea what to expect. I just knew that being 30lbs. overweight was not where I desired to be. Healthier choices vs Eating last minute

If you don't meal plan you'll find yourself going out for dinner. And you are most likely to end up exceeding your daily calorie and sodium intake! Even just stopping at the grocery store to pick up a last minute dinner may lead to poor choices. When you shop hungry, you are more likely to throw junk food into your cart.

Prep food as soon as you get back from the store. Wash and dry lettuce. Chop onions. Cook marinate chicken or beef for the week.

Sunday is one of my favorite days. Getting up early to start planning my week and looking through my cookbooks and finding new recipes to try. I didn't do this in the past and I would wing it week by week but after working with my coach, I realized why I have been on a six month long plateau. Once I made the commitment to plan out my week and stop flying by the seat of my pants, the weight started coming off, my workouts were better and over all I just felt better. This way of thinking has flowed over into my everyday life and my business. I am far from perfect but everyday I give it my all. Here are a few tips to help you get started. Cabbage, Bacon, Tomato & Avocado Salad.

Serves 2

1/2 head of cabbage
1 cup of cherry tomatoes or 2 large tomatoes
1 whole avocado
1/2 pound of bacon
salt ( to taste )

You can cut bacon into small bite size strips and put in large pan and cook until done to your liking.  Or cook and cut strips up to bite size pieces.   While bacon is cooking shred up cabbage and cut up tomatoes and avocado combine homemade mayo, bacon and mix together.


Homemade Mayo

1/4 cup of light olive oil (use light and not extra virgin.) 
1 cup of light olive oil (separate from the 1/4)
1 egg
1/2 teaspoon mustard powder
1/2 teaspoon salt
1/2 lemon, juiced ( I add this in slowly and taste depending on the size of the lemon.  It can come out tasting more lemony.
