Happy Friday!!  It's the 4th of July weekend and of course, that just throws a wrench into any healthy eating plan.  Even the most  disciplined  and dedicated people can get a little unfocused when there is an abundance of temptations in front of you!   So the one rule of thumb is this, you don't have to be super strict {unless you want to be} but you do have to set some parameters!  Follow the 80-20 rule which means that 80% of your week you are on track and 20% you enjoy within healthy limits.   We will be having friends over and heading to the local  parade and enjoying some fireworks as well.   I know that I don't want you to undo all your hard work on the weekends!  So here are my tips and some great recipes to help you survive the 4th!   1. Rainbow Vegetable Skewers Total Time:  23 min. Prep Time:  15 min. Cooking Time:  8 min. Yield:  4 servings, 2 skewers each Ingredients: 2 cooked medium beets, cut into 8 ½ to 1-inch slices ½ medium red onion, cut into 8 pieces 1 medium green bell pepper, cut into 8 pieces 1 medium zucchini, cut into 8 slices 1 medium yellow bell pepper, cut 8 pieces 1 medium summer squash, cut into 8 slices 1 medium orange bell pepper, cut 8 pieces 1 medium red bell pepper, cut into 8 pieces 8 cherry (or grape) tomatoes 2 tsp. olive oil 2 tsp. Italian herbs (optional) Preparation: 1. Preheat grill or broiler on high. 2. Place a piece of beet, a piece of onion, two pieces of green bell pepper, a piece of zucchini, two pieces of yellow bell pepper, a piece of squash, two pieces of orange bell pepper, two pieces of red bell pepper, and a tomato onto a skewer. Edamame, Tomato and Feta Salad with Fresh Basil The Labor Day Weekend is in full force and that means picnics and parties for many of us!!  I am always looking for sneaky ways to show people what clean food tastes like without it looking like a diet dish!!!  My Coach shared this recipe and I just couldn't wait to try it!  I had plenty of fresh tomatoes and basil from my garden so I didn't even have to buy them at the grocery store!!! Amazingly good salad! This salad was bursting with flavor and it was gorgeous!!! Ingredients: 3 tbsp olive oil 2 tbsp red wine vinegar, or to taste 1 tbsp water 1 clove of garlic, minced 3/4 tsp table salt 1/4 tsp black pepper 1 pound edamame (shelled) cooked 10 medium plum tomatoes seeded and chopped 1/2 cup basil, fresh, cut into ribbons 1 small uncooked red onion finely sliced 1/2 cup crumbled feta cheese Instructions: To make the dressing, in a small bowl, combine oil, vinegar, water, garlic, salt, and pepper, set aside.

Tropical Salad with Mango, Avocado, and Chicken

Tropical Salad with Mango, Avocado, and Chicken Total Time:  15 min. Prep Time:  15 min. Cooking Time:  None Yield:  1 serving Ingredients: 2 Tbsp. 100% pineapple juice 1 Tbsp. apple cider vinegar 1½ tsp. extra-virgin olive oil 1 medium Serrano chile, seeded, finely chopped ¼ tsp. chili powder ¼ tsp. ground cumin ¼ tsp. sea salt (or Himalayan salt) ¼ tsp. ground black pepper ¼ medium mango, peeled, cubed ¼ medium avocado, cubed ½ cup cubed fresh pineapple ½ cup cubed jicama 3 oz. cooked chicken breast, boneless, skinless, cut into bite-size pieces 12 fresh cilantro leaves, chopped (for garnish; optional) Preparation: 1. Combine pineapple juice, vinegar, oil, Serrano chile, chili powder, cumin, salt, and pepper in a small bowl; whisk to blend. Set aside. Place mango, avocado, pineapple, jicama, and chicken in a medium bowl; mix well. 2. Drizzle with dressing; toss gently to blend. Garnish with cilantro if desired.
