Beginners Guide To Eating Clean

I am a very busy mom, probably just like YOU reading this post!!


I too struggle with nutrition!
I have kids who love chocolate, chips, pop and anything else that I can no longer over indulge in like that ice cream every night.  If you follow me on Facebook, then you have seem me post about Starbucks and my struggle with finding the perfect creamer and giving up the sugary creamers.
I decided several years ago I wanted to get a handle on my nutrition. Learn what works and what doesn't and figure out how to make it work with long job hours and kids!
I was part of a clean eating group and learned that clean eating doesn’t mean starving yourself, it doesn’t mean boring or bland food it doesn’t have to be complicated.
Once I learned what works to fuel my body, help me loose and maintain weight, my life has forever changed.
It simply means fresh, natural foods.
As a wellness coach I have seen many lives changed after completing my 5 day clean eating group! It had opened manys eyes better health and empowered many to continue with amazing health journeys.

Coconut Lime Cauliflower Rice

1 medium heads cauliflower, cut into bite-sized pieces 1 Tbsp. extra-virgin organic coconut oil, divided use 1 (13.66-oz.) can unsweetened organic lite coconut milk 1 cup shredded unsweetened coconut 2 fresh lime juice, divided use 4 tsp. finely chopped lime zest ½ cup finely chopped cilantro; reserve a small amount for garnish ¼ tsp. sea salt (or Himalayan salt) 1-2 cloves of garlic Instructions Place half of cauliflower in food processor; pulse until cauliflower is chopped into pieces about the size of rice. Repeat with the other half. Set aside. Heat oil in large nonstick skillet over medium-high heat. Add cauliflower & garlic; cook, stirring frequently, for 4 to 6 minutes. Roasted Veggies

These Roasted Veggie are easy to make and store well.  I will make a batch for dinner and then use the leftovers for lunch the next day.  You can use any root veggies that you like.  Enjoy 1 small butternut squash, cubed 1 red bell peppers, seeded and diced 1 sweet potato, peeled and cubed 1 Yam 1 red onion, quartered  3 small Beets  1/2 Cauliflower   1 tablespoon chopped fresh thyme 2 tablespoons chopped fresh rosemary 1/4 cup olive oil ( I used rosemary infused oil) salt and freshly ground black pepper Preheat oven to 475 degrees F (245 degrees C). In a large plastic bag, combine the all veggies and onions. In a small bowl, stir together thyme, rosemary, olive oil, salt, and pepper. Add to vegetables an toss until they are coated. Spread evenly on a large roasting pan. Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.
This yummy vegan recipe has more than 13 grams of fiber and almost 17 grams of protein.  With summer around the corner  this will be a great addition to your lunch time meal or a post workout to help refuel your body.  You can also add some scrambled eggs for additional protein and top it off with a touch of salsa. From  Simply Delicious Vegetarian  by Carla Bardi Black Beans in Mango Sauce INGREDIENTS 8 ounces black beans (one can) 10 ounces mango, diced (one small mango) 1 tablespoon fresh lime juice 1 tablespoon fresh lemon juice 1 tablespoon fresh orange juice 1 tablespoon maple syrup 3 tablespoons cilantro, chopped Salt and pepper, to taste DIRECTIONS Combine black beans and diced mango in a large bowl. Add the lime juice, lemon juice, orange juice, and maple syrup to the bowl. Mix well. Add the chopped cilantro, and mix well. Add salt and pepper to taste, and refrigerate until you're ready to enjoy.
