Apricot & Lemon Energy Bars
Ingredients
½ cup dried apricot
½ cup large Medjool dates
1 cup raw almonds
1 tsp lemon juice
Instructions
in a food processor grind the almonds until coarsely ground and place it in a bowl
remove pits from dates and process along with the dried apricots in a food processor until creamy
combine the date/apricot paste with the ground almonds and lemon juice. Mix all with your hands until well combined
press into an 8×8 square baking dish or a loaf pan lined with parchment paper, then cut it into rectangles.
Alternatively, you can just skip the baking dish and shape them any way you prefer. Rap each bar separate with parchment paper or foil so you can easily take it with you
Recipe makes about six 3 inch bars

Roasted Veggies

These Roasted Veggie are easy to make and store well.  I will make a batch for dinner and then use the leftovers for lunch the next day.  You can use any root veggies that you like.  Enjoy 1 small butternut squash, cubed 1 red bell peppers, seeded and diced 1 sweet potato, peeled and cubed 1 Yam 1 red onion, quartered  3 small Beets  1/2 Cauliflower   1 tablespoon chopped fresh thyme 2 tablespoons chopped fresh rosemary 1/4 cup olive oil ( I used rosemary infused oil) salt and freshly ground black pepper Preheat oven to 475 degrees F (245 degrees C). In a large plastic bag, combine the all veggies and onions. In a small bowl, stir together thyme, rosemary, olive oil, salt, and pepper. Add to vegetables an toss until they are coated. Spread evenly on a large roasting pan. Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.
This yummy vegan recipe has more than 13 grams of fiber and almost 17 grams of protein.  With summer around the corner  this will be a great addition to your lunch time meal or a post workout to help refuel your body.  You can also add some scrambled eggs for additional protein and top it off with a touch of salsa. Add the lime juice, lemon juice, orange juice, and maple syrup to the bowl. Mix well. Add the chopped cilantro, and mix well. Add salt and pepper to taste, and refrigerate until you're ready to enjoy.
