Give this nutrient-packed soup a try. This soup has plenty of antioxidants and tastes fantastic. 

What you need:

  • 1-2 tablespoons coconut oil or extra virgin olive oil. 
  • 1 large or medium yellow onion chopped
  • 3 garlic clove chopped
  • 1 teaspoon ginger root minced
  • 5 medium-large size carrots cut into 2" chunks
  • 1.5 teaspoons ground turmeric
  • 2-3 cups vegetable broth ( add more if needed for consistency
  • 2 small oranges juiced
  • Black pepper salt to taste

Put it together:



  • In a large soup pot, warm the oil. Add onion and garlic, stirring, until the carrots are soft and onions are translucent.
  • Add broth and ginger and stir to combine all ingredients.
  • lower the heat to medium-low add broth and orange juice. ( The juice is optional if you don't have any on hand.
  • Cover and simmer for about 10 - 15 minutes.
  • Add black pepper and salt to taste.
  • Add to a blender, puree the soup until smooth.
  • If needed, add extra broth or liquid to reach the consistency you like.

Ingredients 2 pounds chicken breasts, boneless and skinless1/4 cup gluten free bread crumbs or whole wheat panko crumbs (not gluten free)2 tbsp fresh grated Parmesan cheese2 egg whites1/4 tsp sea salt1/8 tsp black pepper1/8 tsp lemon pepper1/8 tsp oregano Directions Preheat oven to 350 degrees f.Break open eggs into a shallow dish and scramble well.In a medium mixing bowl, combine bread crumbs, parmesan cheese, sea salt, black pepper, lemon pepper and oregano.Dip each side of chicken breast into the egg and then into bread crumb mixture.Place in a large baking dish.Bake at 350 degrees for 45-55 minutes, or until the internal temperature reaches 165 degrees F.

Raw cauliflower tabouli

I found this to be one of my favorite dishes.  Now you don't have to be vegan to enjoy this Delicious dish you just have to enjoy cauliflower.  This is quick and easy to make cauliflower tabouli replaces gains that is used in tradional Mediterranean tabouli dishes. 


Ingredients 1 cauliflower, cored and cut into large bite-size pieces (about 6½ cups florets)
1 large cucumber or 2 small cucumbers, halved lengthwise, seeded and cut into ¼-inch dice
1 large tomato, cut into ¼-inch dice or 1 cup of cherry tomatoes cut in half
¾ cup finely chopped flat-leaf parsley 1/2 small or medium red onion
1 tablespoon mint leaves finely chopped
2 tablespoons extra-virgin olive oil
2 cloves of garlic
pink himalayan salt ( to taste )

Directions

In the bowl of a food processor, pulse the cauliflower to finely chop it into small, grain like pieces, scraping down the bowl with a rubber spatula as needed.
