Guilt-Free Easter, Tips to help you stay on track,
I use to love to indulge on Easter you know some wine, glazed ham or a yummy prim rib and of course those packed fill sugary cadbury creme eggs! Oh ya I would be in a food coma for hours and not to mention the sugar headache that lasted into the next day. These days I have backed off on the foods that no long fit my lifestyle. I do allow myself to have a treat but going over boar isn't an option any longer. Use the tips I posted below to help keep you on track so that you don't go completely off track but you can still enjoy the day.

Easter is a day of celebration and indulgence in wine, red meats, and sugary sweets. While it's easy to go overboard in the Easter feast, it's all about balance. Yes, you are allowed your Cadbury Creme Eggs, but use these tips to keep you from completely falling off your diet plan.

Let's start with the basic and get your water in. I like a little natural flavor in my water so I add a thin cucumber and lemon slice in. This also help with liver-detoxing and digestion.

Let[s face it, there is going to be lot's of stuff like cheese, cracker and Easter candy. Don't allow yourself to sabotage your hard work because come Monday you will wish you had stayed on track. Fill up with veggies or salads the fiber will help fill you and you can stay on track. Just say NO!


Have a juice or smoothies. This is another way to get your fiber in and will help you stick to the plan. Just because everyone is piling their plates at brunch doesn't mean you have too.

You still feel like you need that bread or candy. Have it as your treat after you have eating and filled up on the healthy stuff. Sure we all want to indulge on bread & butter ( my kryptonite ) oh and one or two bites of chocolate caramels, peeps and jellybean seem like they won't hurt you in one sitting think again. Pick one and enjoy.

Coconut Lime Cauliflower Rice

1 medium heads cauliflower, cut into bite-sized pieces 1 Tbsp. extra-virgin organic coconut oil, divided use 1 (13.66-oz.) can unsweetened organic lite coconut milk 1 cup shredded unsweetened coconut 2 fresh lime juice, divided use 4 tsp. finely chopped lime zest ½ cup finely chopped cilantro; reserve a small amount for garnish ¼ tsp. sea salt (or Himalayan salt) 1-2 cloves of garlic Instructions Place half of cauliflower in food processor; pulse until cauliflower is chopped into pieces about the size of rice. Roasted Veggies

These Roasted Veggie are easy to make and store well.  I will make a batch for dinner and then use the leftovers for lunch the next day.  You can use any root veggies that you like.  Enjoy 1 small butternut squash, cubed 1 red bell peppers, seeded and diced 1 sweet potato, peeled and cubed 1 Yam 1 red onion, quartered  3 small Beets  1/2 Cauliflower   1 tablespoon chopped fresh thyme 2 tablespoons chopped fresh rosemary 1/4 cup olive oil ( I used rosemary infused oil) salt and freshly ground black pepper Preheat oven to 475 degrees F (245 degrees C). In a large plastic bag, combine the all veggies and onions. In a small bowl, stir together thyme, rosemary, olive oil, salt, and pepper. Add to vegetables an toss until they are coated. Spread evenly on a large roasting pan. Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.
This yummy vegan recipe has more than 13 grams of fiber and almost 17 grams of protein.  With summer around the corner  this will be a great addition to your lunch time meal or a post workout to help refuel your body.  You can also add some scrambled eggs for additional protein and top it off with a touch of salsa. From  Simply Delicious Vegetarian  by Carla Bardi Black Beans in Mango Sauce INGREDIENTS 8 ounces black beans (one can) 10 ounces mango, diced (one small mango) 1 tablespoon fresh lime juice 1 tablespoon fresh lemon juice 1 tablespoon fresh orange juice 1 tablespoon maple syrup 3 tablespoons cilantro, chopped Salt and pepper, to taste DIRECTIONS Combine black beans and diced mango in a large bowl. Add the lime juice, lemon juice, orange juice, and maple syrup to the bowl. Mix well. Add the chopped cilantro, and mix well. Add salt and pepper to taste, and refrigerate until you're ready to enjoy.
